Handy Dandy Rice


It's time to bust the myth on rice- it doesn't have to turn out bad.

Here's a 'handy dandy' recipe, sure to make your rice endeavors successful:

Basic White Rice (makes approx 6 cups):

2 tsp unsalted butter, veg or olive oil
1 cup long grain white rice
1 1/2 cups water
1/2 tsp table salt

1) Heat oil in medium saucepan over medium heat. Add rice; cook, stirring constantly for 1-3 mins- rice should start smelling nutty. Add water & salt; bring to boil, swirling pot to blend ingredients.

2) Reduce heat to low, cover with clean kitchen towel and cook until liquid is absorbed, approx 15 mins.

3) Turn off heat; let rice stand on burner, still covered to finish cooking, approx 15 mins longer. Fluff with fork and serve.

This method came from Cooks Illustrated and I've never had a problem making rice since I started using this!

*Note: Basmati rice requires a different cooking method- will share that soon:)
